Ingredients:
For the Patties:
1 can (400g) black beans, drained and rinsed
1/2 cup breadcrumbs (use gluten-free if needed)
1/2 cup cooked quinoa or brown rice
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon soy sauce or tamari (for a gluten-free option)
1 tablespoon tomato paste or BBQ sauce
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
Salt and pepper to taste
2 tablespoons ground flaxseed mixed with 5 tablespoons water (this is your flax egg)
For the Burger Assembly:
Whole grain or brioche-style vegan buns
Sliced vegan cheese (optional, such as cheddar or Swiss-style)
Fresh lettuce leaves
Sliced tomatoes
Sliced avocado
Sliced red onion
Dill pickles, sliced
Vegan mayonnaise, BBQ sauce, or aioli
Optional: Beetroot slices (for an Aussie twist), caramelized onions, or grilled mushrooms
Instructions:
Prepare the Patties:
In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some texture for bite.
Add the cooked quinoa or brown rice, breadcrumbs, onion, garlic, soy sauce, tomato paste, cumin, smoked paprika, salt, and pepper.
Mix the ground flaxseed with water in a small bowl and let it sit for a few minutes until it thickens. This will act as your egg replacer.
Add the flaxseed mixture to the bean mixture and combine everything well. The mixture should hold together but not be too wet. If it's too sticky, add a little more breadcrumbs.
Form the mixture into 4 patties and refrigerate for at least 30 minutes to firm up.
Cook the Patties:
Preheat a grill or skillet over medium heat. Lightly oil the surface to prevent sticking.
Cook the patties for about 4-5 minutes on each side until they are golden brown and heated through.
If using vegan cheese, add a slice to each patty in the last minute of cooking and cover with a lid to melt.
Assemble the Burgers:
Lightly toast the vegan buns on the grill or in a toaster.
Spread your chosen sauce on the bottom bun.
Layer with fresh lettuce, tomato, avocado, and any other toppings you prefer.
Place the cooked patty on top, add more sauce if desired, and top with the other half of the bun.
Serve:
Serve immediately with your favorite sides, like sweet potato fries, a fresh salad, or a vegan coleslaw.
